Butterhead:---

Description: Loose heads. Small-headed lettuce surrounded by a rosette of ground hugging leaves. Its leaves have a buttery texture. Butterhead cultivars are most popular in Europe. Popular varieties Buttercrunch, Tom Thumb, Adriana.

Cos/Romaine:---

Description: Grows in a long head of sturdy leaves with a firm rib down the center. Erect and has a cylindrical shaped head that is compact at maturity. Unlike most lettuces, it is tolerant of heat included Coastal Star, Winter density.

Loose Leaf:---

Description: Tender, delicate, and mildly flavoured leaves. This group includes Salad Bowl, Simpson elite.

Crisphead/Iceberg:---

Description: Forms tight, dense heads that resemble cabbage. They are generally the mildest of the lettuces, valued more for their crunchy texture than for flavour. Cultivars of iceberg lettuce are the most familiar lettuces in the USA. The name Iceberg refers to the crisp, cold, clean characteristics of the leaves e.g. Red iceberg, Crispino

Stem/Asparagus Lettuce:---

Description: Known as Stem Lettuce, Asparagus Lettuce and Chinese Lettuce. Though it has a common name of Celtuce, it is not a cross between Lettuce and Celery. It is just a variety of Lettuce grown for its romaine-like foliage and mainly for its thick, edible stem. Stem grows 6 to 8 inches long and about 1½ inches in diameter. They can be cooked like broccoli. Leaves can be used for salad, e.g. Celtuce, Chima.
