Conference Overview
Health and happiness are two of the most important elements of a good
life. The food we eat plays a major role
in both - impacting our health and our daily enjoyment of life. The purpose of
this conference is to gather together a diverse group of scientists who can
integrate their knowledge of the fundamental principles of physics, chemistry
and biology to efficiently create higher quality and more healthful foods. The particular emphasis of this conference will
be on the rational design and fabrication of foods from a scientific perspective, focusing on
understanding and utilizing the basic principles of the directed assembly of
elementary food components, such as macromolecules, supramolecular
structures and colloidal particles.
